If you’re looking for an easy pumpkin cheesecake recipe, you can stop right now! I did the research, and tried making mini pumpkin cheesecake bites three different ways, to find out the absolute recipe for pumpkin cheesecake bites.
The first recipe for pumpkin cheesecake is a bit more cream cheesey. I mixed:
- 8 oz. cream cheese
- 1/2 cup canned pumpkin
- 1 tsp. vanilla
- 1/2 cup brown sugar
- 1 tsp. pumpkin pie spice
I piped the mixture onto ginger snaps. Which were very SPICY by the way. Like, you took a bite of one and it was a spicy slap in the tastebuds. You can definitely tell by the texture that it’s predominantly cream cheese, and the pumpkin taste is very subtle.
Next time I make this version, I would probably just serve it as a dip along with apple slices, celery sticks, and/or baby carrots.
The next pumpkin cheesecake recipe is a bit more pumpkiny. I mixed:
- 8 oz. cream cheese
- 1 cup canned pumpkin
- 1 tsp. vanilla
- 1/2 cup brown sugar
- 2 tsp. pumpkin pie spice
I piped this mixture onto ginger snaps as well. I definitely think this version was my favorite of the three pumpkin cheesecake recipes. The spice of the ginger snaps complemented the pumpkin mixture perfectly. These pumpkin cheesecake bites were like a little piece of pumpkiny heaven in my mouth. Yum, yum, yum. I literally could not stop eating them.
Last but not least, I used the same pumpkin cheesecake recipe as above, but I piped the pumpkin mixture onto graham cracker quadrants. The graham crackers didn’t complement the pumpkin as nicely as the ginger snaps, but I wanted to make a decoration on them and it’s easier that way.
Meh…you know…it’s not my best work. (See my other cheesecake bites.) But you can see how it would be possible to make the pumpkin bites a little more Halloween-ish. And the combination of the pumpkin and M&Ms was definitely something I want to explore some more.
