It’s Pi Day! Do you know what Pi Day is? It falls on March 14 every year because the date is 3/14 or 3.14 AKA the first three digits of Pi. This year is an extra special Pi Day because 3/14/15 are the first FIVE digits of Pi. And if you wanted to go even further, 3/14/15 at 9:26 is the ULTIMATE Pi moment. So, what better way to celebrate such a monumental Pi Day than with pie?!
I have never actually heard of an almond cream pie before. I came up with the idea one day when my husband and I were talking about these really delicious almond croissants we both enjoyed from a local cafe. We had each discovered their yumminess separate from each other, and one day we were both just like, “You know what are so good from [local cafe]? Almond croissants!”
As I’ve mentioned in other posts, my husband LOVES pie. For his birthday we always have pie instead of birthday cake, and at our wedding we even had a groom’s pie. So I thought, “Maybe I can make some kind of pie that tastes like the almond croissants.”
This is the first time I’ve made a cream-type pie without using some kind of box mix, and it turned out really great!
Ingredients:
- 3/4 cup white sugar
- 1/4 cup cornstarch
- 3 cups whole milk
- 4 egg yolks, slightly beaten
- 2 tablespoons butter
- 1 cup chopped almonds
- 1/4 teaspoon almond extract
- 1 9-inch baked pie shell
- 1 package whipped topping
- Toasted slivered almonds
Directions:
- In a saucepan, thoroughly combine the sugar and cornstarch. Gradually stir in milk and cook over medium heat until mixture is thick and bubbly. Reduce heat and cook and stir 2 minutes more. Remove from heat.
- Temper the egg yolks by gradually stirring about 1 cup of the hot sugar cornstarch mixture into the egg yolks. Return the egg mixture back to the saucepan and bring to a gentle boil. Cook and stir 2 minutes more. Remove from heat and stir in the butter, chopped almonds, and almond extract.
- Pour mixture into baked pie shell. Cover pie and chill 4 to 6 hours.
- Spoon whipped topping onto pie. Garnish with toasted slivered almonds. Makes 6 to 8 servings.
- Enjoy!
