My husband’s co-worker struck again! I woke up one day and we had tons more mushrooms sitting on the kitchen counter. So of course I had to find something new to do with them.
The mushroom soup I made was heavenly, but we’re in the middle of a sweltering heatwave, and I just could not. do. soup. So I found this recipe for baked mushrooms from Damn Delicious and I decided to tweak it a little bit to meet our taste buds.
This recipe is super quick and easy, and it makes a great veggie side item for dinner. Hey, it even microwaves pretty well for leftovers as well! My only regret is that I didn’t make more of them because they were so delicious.
Ingredients:
- 4 cups mushrooms, thinly sliced (I have no idea how many pounds this is, but it’s just enough to cover a cookie sheet.)
- 4 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon dried thyme
- 1 and 1/2 cup shredded parmesan cheese, divided
- Salt and pepper to taste
Directions:
Spread out the sliced mushrooms on a cookie sheet or baking pan and toss with olive oil, lemon juice, dried thyme, salt and pepper, and 1 cup of shredded parmesan cheese. Place into a 400 degree oven and bake for 10 minutes. Remove from oven, mix, and add remaining 1/2 cup of shredded parmesan cheese. Bake for 5 more minutes.
Serve and enjoy!

at (10 years ago)I love the combination of mushrooms and thyme, and the addition of lemon sounds heavenly! I’d leave out the parmesan to make this vegan, but I can definitely see this becoming a regular dish for me. Thanks for sharing!
