Since my daughter started transitioning from formula to solids, I’ve been really vigilant about what she eats. I’m all about buying the most natural foods possible for her to try out, and in the process of feeding her this way I’ve been eating a lot healthier too. We love eating local foods, including fruits and vegetables from our local farmer’s market, and Foster Farms® fresh chicken products sold in California, which are locally grown in California.
We recently visited the farmer’s market and I was inspired by all the beautiful local produce to make maple dijon chicken with roasted fall vegetables on the side.
This recipe was made with Foster Farms® Simply Raised without antibiotics fresh chicken. I love that it’s locally raised in California, fed a 100% vegetarian diet, and contains no added steroids, hormones or antibiotics, so I feel good about giving it to my daughter.
While some chicken brands are trucked from across the country, which could take up to a week to reach California, Foster Farms® is delivered fresh from local ranches in 48 hours or less. Additionally, all Foster Farms® fresh chicken products are American Humane Certified.
Ingredients:
- 1 pound Foster Farms® Simply Raised without antibiotics fresh chicken
- 2 tablespoons butter
- 1/2 yellow onion, roughly chopped
- 1 teaspoon minced garlic
- 1/2 cup low-sodium chicken broth
- 1 teaspoon dried thyme
- 4 tablespoons organic dijon mustard
- 2 tablespoons organic maple syrup
- 1/2 cup water
Directions:
Melt butter in a large skillet over medium heat. Place the Foster Farms® Simply Raised chicken in the pan, making sure not to crowd the pan. Heat chicken until thoroughly cooked.
Remove chicken from the pan, and add in onions and garlic. Cook for 2-3 minutes before adding in chicken stock. Cook on high heat until chicken stock is almost all the way reduced. Add in mustard, thyme, water, and maple syrup. Whisk mixture until entirely combined. Add in chicken and heat an additional 1-2 minutes.
Top maple dijon chicken with sauce and fresh parsley, and serve with fresh, roasted vegetables on the side. Enjoy!
