Baked Bacon French Toast

Baked-Bacon-French-Toast

Okay, so I have a confession to make. I absolutely love, love, love french toast – but I don’t know how to cook it! Like, at all. I’ve tried following all sorts of techniques and recipes for french toast, but I simply can never get it right. So finally, I decided to make my own recipe for french toast. And while I was at it, I threw in some bacon!

Now, let me just precede the recipe with this: This ain’t your momma’s french toast! Okay? This is some crazy decadent french toast. This probably isn’t the baked french toast you would make for Tuesday  morning breakfast. It’s very rich, and I would probably reserve it for special occasions like Easter brunch or Christmas morning.

That being said, tie your shoes on tight, because your socks are going to be blown off by this baked bacon french toast.

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup brown sugar
  • 6 slices white bread, cut into 1/2″ slices
  • Approx. 12 ounces bacon (I used 3/4 of a 1 pound package of bacon), cooked and crumbled
  • 4 eggs
  • 1 cup whole milk

Directions:

Mix together butter and brown sugar and spread half of mixture in the bottom of a 9×9 baking dish. Place half of bread on top of butter and brown sugar mixture. Add crumbled bacon on top of bread (reserving about 2 tablespoons of bacon for topping). Add remaining butter and brown sugar mixture on top of bacon. Layer remaining bread on top of bacon/butter/brown sugar.

Mix together eggs and milk. Pour egg/milk mixture on top of all layers of french toast. Refrigerate over night (or about an hour if you’re making this the morning of).

Bake french toast in oven at 350 degrees for 30 minutes or until top is firm and golden brown. Sprinkle remaining bacon crumbles and about 1 teaspoon brown sugar on top of the french toast and broil for 5 minutes.

Oh. my. gosh. That looks *amazing*! (And as a total side note, I wonder if you could cook regular French toast in a waffle iron. I’ve never tried it, but it seems like it might be an option if you’re having trouble with the “getting it cooked” part.)

I have enjoyed basic french toast (dipped in an egg batter) for over 50 years but the tremendous achievement you have attained by adding bacon and making the recipe so easy to follow is a godsend to this old bachelor…thank you!

OMG, that looks amazing. I am not a good cook. I have tried french toast but it either is a soggy mess, or it is dry. I will try this though, I think I can pull off an oven version!
